Although I'm never happy to see August because it means I'll see less sun for many months, I do feel a bit of reconciliation with the blackberries ripening. Followed of course by the apple season. Not to mention pomegranates showing up at the grocery store shortly after that. It makes August a little easier for me.
With Dave being gone every week, the evenings tend to go by a bit slower. I'm tired, the kids miss him and we just count the hours until he is back with us. Last night as it started to sprinkle with rain we headed out to the back of our property to pick blackberries.
I wanted to make a quick berry crumble but I couldn't find a gluten free one that looked simple. I found a couple berry crumble recipes, changed them around and came up with my own gf version.
Portmerion pie dish that my mother picked up for me for $9.00. A very good price for portmerion.
A little messy around the edges but it smelled delicious.
Gluten Free Blackberry Crumble
3 cups blackberries
1 tbsp tapioca
3 tbsp agave syrup (keiran thought it was tart so sweeten to taste)
1/2 tsp lemon juice
1/2 cup water
Place bug free blackberries in an oven safe pie dish. In a small bowl whisk 1/2 cup water with tapioca until smooth. Add agave and lemon juice. Pour over berries and mix gently.
Crumble
1/3 cup softened margarine
1/2 cup brown sugar, packed
1 cup hazelnut flour (I use Bob's Red Mill)
1 cup brown rice flour
1/2 tsp salt
Mix crumble together with hands until crumbly. Spread 1/2 of crumble over berry mixture. Freeze other half for next crumble. Bake at 380 F for 25 minutes.
Funny enough when I was eating wheat I don't remember having too many crumbles. So I'm sort of making it up as I go along. It is a light crumble and I found it to be delightfully tasty because of the hazelnuts. Because I don't throw together too many recipes some of it may need to be tweaked. A perfect summer's treat for a uh, cold and rainy day?

You're so lucky... Backberries and all sort of that fruits cost a fortune here and they don't grow very well were we live. I can almost smell that pie from over here.. Yummy yummy

OH! OH! OH! I made blackberry cobbler last week and I've promised a pie to follow. Just from what other people here in Seattle seem to consider "junk." How can one NOT take advantage of all these beautiful berries?!?!?! Of course, I forgot to take photos so the post may come in November :) ~Lee

YUM!!!! Picking blackberries if one of my fondest childhood memories of Silverdale. We had wild blackberry bushes growing out the yazoo!! We made blackberry pancakes, crumble, cobbler, turnovers and mini pies. Then we froze enough to last us the whole year. Blackberries are still one of my absolute favorites!! But there's nothing like eating the HUGE, warm from the sun, ones right off the vines.
