When I had to make a life changing diet 5 1/2 years ago there was one food that got me through the emotional roller coaster of suddenly living without wheat and gluten; Pamela's Brownies. I don't want to admit that I ate them every week but I'm pretty sure I did. They saved me and helped me through that first and second year. I didn't cope very well with one day being able to eat everything to the next day being able to eat very little. It hurt on so many levels. Food was my life and I had to almost reinvent myself. 5 1/2 years later and I'm a little stronger but I still miss my old life. Pamela's has become one of my best friends on a food level. We eat her pancakes every Sunday morning. I'd eat her brownies more if I wasn't so tempted to eat the entire pan in one setting.
When I opened up a package from Pamela's last week with two new products to review I gave a quiet cheer when I saw a Single-Serve pack of Pamela's Brownies and another pack of her Baking & Pancake Mix. Not only were the Brownies a single-serving but it was microwavable as well. That meant in less than four minutes I could go from opening a packet, to mixing it up to taking a bite. Could I ask for anything more?
The single serve packets will be available this fall at natural food retailers as well as Amazon.com. Each packet will retail for about $1.99 each. I personally buy most of my Pamela's product through Amazon. I get the 6 months subscription for her Baking and Pancake Mix which gives me a significant savings. This means that every 6 months Amazon automatically sends me a case. I don't even have to think about it.
For this review of course I chose the Brownies. I grabbed my Cath Kidston mug (thanks Apryl) from the cupboard, emptied the Single Serve Brownie packet into the mug and mixed it with 2 tbsp oil and 2 tbsp water. That. was. it. I placed it in the microwave (they also give you an option of cooking it in the toaster-oven for 20 minutes) for about a minute and twenty seconds until it was ready. So simple and quick.
The flavor was practically identical to the regular brownies that you make in the oven. The magic of Pamela's that I think many gluten free foods miss is the correct balance of sweet & salt. Pamela's really understands the chemistry of food. If I taste a cookie or brownie that is too sweet I can tell that they forgot to add the salt. Salt brings out the sweet and gives it this fire that leaves you craving for more. Pamela's have also perfected the texture in her foods. My gluten eating friends often say that her pancakes are better than their gluten laden ones.
Single-Serve Packs of Pamela's Brownies are going to line my cupboards. They will be perfect when I get my chocolate craving but don't want to be teased by an entire pan of brownies that quietly whisper my name each time I walk into the kitchen.
From a health point of view what I love about these is that they don't have any cane sugar in the mix. They are sweetened with Molasses and Honey which makes them perfect for my children. Their pancakes don't have any sweetener in them at all, just the maple syrup that you add once they are on the table. You can also go to their website and check out their Recipe section.
